did u recently buy it? if so all the new ones i've looked at in stores are shitty, none of them have pressure guages on them anymore and i can't find one that goes more than 10psi. if you have recently just purchased it, i would imagine its a 10psi.

ya mine is just like that 10 psi, if your doing BRF 90 min is fine, i've never had a problem with 90 min, if your doing grains i would say 2 hours.

How, in the name of crap, did you fail to figure out the PSI BEFORE you started cooking?

I'd never pressure cook my jars longer than an hour, it's just not necessary.. of course you might have super-mutated mold spores or bacteria in your house.

Just kidding. :stoned:

Trust me, Once you pull that cap off your presto and the steam comes out like a geyser, you know your sterile. My PC dont have a gauge, it works great

The reason you can sterilize a sealed container is simple. Water under pressure can remain liquid at higher temperatures than boiling. Thus, you are exposing your sealed container to a consistant temperature above boiling (which kills a number of contaminates). Many nuclear reactors in the U.S. work on a pressurized water system than achieves higher than boiling temperatures... Also, the pressure in the cooker also puts the substrate under a larger amount of pressure than atmospheric, killing other contaminates. The combined effect is a sterile substrate... Seems simple, right?

I work with a lil' mirro with a ten PSI weight that hasn't given me any trouble yet. I PC my jars for a little over an hour. Once your rocker starts kicking, just lower it to a temp that keeps the weight rocking lightly.
