They are bluing from bruising...you dont think youd bruise if someone stuck you in an oven to dehydrate you and shrink you to 10% of your mass?
I've grown out 15 different cubie strains now, certain strains just blue more then others when they bruise. Or some shrink less. I've seen shrooms be white as hell, and be some of the best. Some are incredibly blue. All depends on the strain and how theyre grown. Of course how their handled too.
Just my take on it all...

I've only done 7 strains but have also noticed this.

Is there a way to purposely make the shrooms more oxidized? that would be cool to have a collection of BLUEE shroomMMS!

my bud used to slice the stems of freshly picked guys to promote bluing, because like you said, people like them that way...
you are right, this is why some species like cyanofib's are better wet then dry. Fibs psilocin-psilocybin content is backwards compared to most shrooms
