Yes bacterial probably. Perhaps it is too wet which promotes bacterial contam.

no visible signs of contamination? are your spores from a vendor? did you steam or p/c? did you wipe your syringe's needle down inbetween jars or inbetween each individual hole?

boost your PC times to 1 hour 15 minutes and that should eliminate your comtam problems
the dirty sock smell is definately a bacterial

Yes, on this note, has anyone had a problem with a lower PSI? All i've been using is a little Mirro that won't run above 10 PSI, so I've just been PC'ing them for about 75 minutes.

A lower PSI pressure cooker will still work, but you have to increase the cooking time. TMC has a cool little table to calculate how much time is required for different pressures.

ya i have a small 4 quart mirro that only goes to 10 psi, i cook for 90 min and dont' have any problems. BTW make sure you start timing once it starts boiling...when it starts shooting steam out from under the weight and the weight starts jiggleing start your timer for 90 min. that should do the trick.

Have you changed anything in your substrate? Different brand/type of flour, maybe?

Psi has nothing to do w/ it. BRF can be boiled for an hour. I'd got an hour and 15 but i doubt the problem is your cooking time, look for your faults elsewhere, i'm betting that you have bacterial spores floating everywhere and never thought about clean everything when you got contams...

Have you tried a stronger deodorant? Try applying Old Spice to the cakes before steaming them, then freshen them with a second application before birthing them, so they attract the ladies...
