pka or kpa?
55 kpa would be 55 Kilo-Pascal, which would be 8 psi.

You can basically sterilize everything. I would increase the "normal" sterilization times by 50%.
Also, should you run into problems with bacterial contamination with rye, use spawn preparation techniques which include a long soak time.

The sterilizing time depends on what you are sterilizing , at which temperature, and in what size containers.
That's why I wanted to know WHAT you are sterilizing.

Yea...12-24 is suggest, he's cooking at lower temps, so he might as well let the endospores germ. more. More time = more germ.ed endospores i.e it'd help w/ his temp. prob...

But don't soak over 24, don't want them to hydrated, you probably won't have to simmer either...

You don't necessary want Burst kernals, You want it to where you can gently squeeze the insides out, anything further than that
Big man Agar posted that awhile back...He posts great shit to help stop Bullshit like simmering, its a waste of time, but w/e you decide is kool i guess
