Most important Nutes and Substrate conditions?

I'm considering, brainstorming, trying some substitute substrates and I'm compiling a list of the following. I was hoping some of you veteran growers and mycologists could help me out:

1. The essential nutes & microenvironment that a substrate would/should contain for fast, healthy and hardy myc colonization. (Vit B's, carbs, lipids, minerals, etc...)

2. The perfect physical qualities of a substrate for fast and hardy myc colonization. (Firm vs. soft, round, irregular, square, fibrous, water retentive, etc...)

You get the idea.

Also. I found this article on line that discusses pasturization and states that the growth medium shouldn't be cooked above 140F in order to retain microorganism balance and content.
