contam question

i made up some BRF jars a few days ago and i didn't have time to PC them, I just opend them up to smell for any contams, and they all smell sour, will it be fine to just PC them the kill off any bacteria or should i just make some more up?

I think it will be smart if you start over. And NEVER open them during incubation.

i never said anything about them incubating, i just mixed up the substrate and ran out of time to PC the rest of my jars, so i opend them to see if they got contamed before i cook them. i just don't see why it would make a difference if i cooked these rather than making new ones, because the new ones are still going to have contams in it, in a way its better that these jars have been able germinate so hypotheticaly wouldn't the bacteria be easier to kill, its the same concept as soaking grains before cooking them.
