Please help! Something is not right in the fruiting...

Hello,

I think I might be on the verge of losing everything. I had transferred several fully inoculated jars to straw in clear plastic containers. The straw became fully inoculated in around a week, some even less. I then put a casing layer of pure vermiculite on top, which was quite wet but maybe not wet enough I have since learned. It was very slow for the mycelium to spread through the casing. After more than week, (some were at the two week mark because they were cased first) the vermiculite was not even half inoculated. It was recomended to me by others here to go ahead and fruit, which I have been doing for several days (today is the fourth day.) Well, only one container has only one mushroom, that came up yesterday (out of ten containers.) I'm keeping the room temperature in the low to mid seventies, but I'm told the straw puts off some of it's own heat. I've been lighting with decently blue spectrum flourescents (5000K I think) for ten to twelve hours a day. I keep my containers not completely latched closed (the humidity quickly goes up to 100% if I latch them.) Anyway, there is still some condensation inside the containers always, not as much when I kept them completely latched shut all the time for the straw to become inoculated, but still a good amount of water droplets. But my digital walmart humidity gauge insists that the humidity is only around 40% in the containers. Can this be right if there is condensation buildup? Feels so humid in there to me. My ambient room humidity is usually in the twenties or thirties. What could be wrong? I have been misting them. The gauge will give a reading of 'HI' if I hold it over the humidifier. I know these gauges are not so good, that's why when I have some condensation, I just cannot beleive the 40% reading. But there is only one mushroom, and no signs of anything else except some mycelium poking through. What should I do?

Shouldn't I be seeing a lot more development by now? All I see is the one mushroom which appeared on the third day, no pins, nothing but mycelium, it is the 4th day of fruiting.

Don't expect anything this soon.  Pins can take anywhere from 5 days to 18 days in my experience.  Be patient!

A little vasoline spread thin on the lid will help keep the condensation off.

you should not case a tray with pure vermiculite when its wet its too heave and settles in a tight mass greatly slowing the mycelia growth, you beat bet is to scrap off the vermiculite and fruit just off the straw or to then re case with peat vermiculite mix 80/20
