I have a phoenix oyster jar that was about 60-70% colonized and it has completely stopped growing the past 5 days. I think the wbs jars got too dry. If I injected some sterilized water in there and shook the jars do you think it would hurt anything?
I get my rye as dry as I can before P.C.ing. Even than, the jar gets a few inches of water when colonized. Do you detect any tell-tail smell from the bottle? (You can tell from a distance, don't stick your nose in the bottle!) Bacteria stops some of mine every now and than. Progress will also halt if not enough air exchange to keep the C02 at bay. I punch 2 holes in the lid with a paper punch and cover with tyvek OVER the lid, as under appears to cause contamination to wick into the jar. I usually cook my rye for a couple of hours in the PC. Don't let it get you down. Start another, the more you do, the better your chances, You will get it!
