Should the jars get air?

My jars are incubating in a box that is for all intesive puposes air tight. Should they get air or is ok?

Leave tops of the jars untaped/uncovered and you'll be fine. I doubt your incubator is 100% airtight. The very small volume of air that is actually in your box is all that's needed for your jars to breathe.

Like I said, just don't cover the jars themselves and you'll be good.

They do not really need any air until they are just about fully colonized. When my cakes get to about 85% done I take the foil, tape if you are using any, off of the jar and give each jar a good shake for some air exchange. I leave them off for the duration until they are done. I keep them upside down at this point as well.

This seems to speed up the last bit of colonization of the cakes.

(I have never had a contam issue by doing this either.)

But at this time your answer is no.

No there not airtight but the lid is tight and it's inside another container so there's no air exchange. Thanks for the info guys.
