Importance of gas exchange during incubation....

One of the jars was covered with a sandwich bag during inoculation and the bag was left over the opening and sealed using a rubber band. Its growth rate is NOTICEABLY SLOWER than any of the other jars. I'm kind of afraid to remove the baggy and since the Mycelium is progressing decided to leave it alone. I have a feeling that at about 3/4 colonization it will stall out though.

Very good, as long you are not overzealous and tape down the foil. If you do as directed, then the exchange is better if you use 2 layers of foil than if you use a lid with holes.

So you guys would suggest that I remove the baggie then? I mean if air gas exchange is as important as it seems to be would it not be a good thing to remove any type of a lid completely and rely on the verm cap to keep out contams? If contams are gonna get in I don't think that a couple layers of loosely applied tin foil are gonna make it much harder. So if maximum gas exchange is optimal and there is no denying that it speeds up colonization it would only make sense to just let em breath. Of course you would want to take a few more precautions to keep contams out but I personally don't see that being an issue. Heh, I've talked myself into it, lids are comin off.

"If contams are gonna get in I don't think that a couple layers of loosely applied tin foil are gonna make it much harder."
And that kind of thinking will get you contaminated cakes.
