I have read that the areas of the cake which you touch will not fruit. What is the best way to handle the cakes when doing the dunk tek? Is the dunk tek recommended? Dunk and roll?

That's an old wives tale. Dunking is an excellent way to hydrate your cakes or casings. Personally, I wash them under the faucet before and after the dunk. During the dunk, keep it completly submerged, and in the refrigerator. The refrigerator will keep bacteria dormant while the dunk is in progress.

you can leave them in the jar just scrape the top layer of verm off, and fill it with disstilled water and put in the fridge for 12 hours, i think anything over 12 is a waist just a opinion thou then double end case its not so messy when you do it that way and you can get away without touching it

They need to be completely submerged.

I have decided to go both ways. Mushrooms too, lol. I double end cased my first set of cakes, thats top and bottom as you called it, and got very good results. After the first flush, I decided to double end case and roll, seems to be working quite well so far. My next set of cakes also have the inner resevoir. If shrooms are 90-92% water, I want to get them as much as I can. Good Luck.Peace,Love,Happiness and Harmony. Hippie Chick

You want the cakes to stay above freezing. If you add ice to the bucke it will level out just above freezing. Should be ok, but I would say that if you don't want to use the fridge, then you could so cold water and maybe tub in tub with ice water underneath.
Anyway, probably safe to put ice in with it, but not completely sure.

Ditto! I actually handle them quite roughly as I rub off any pins/mycelium matter before the dunk then a quick post dunk rinse and they get double ended and into the fruiting chamber they go! Always excellent results

Why would you rub off pins and mycelium? Isnt the formation of these things a goal of cultivation? Also, no harm done if I touch my colonized cakes with bare hands to double end them?

You don't rub off mycelium silly just the loose bits if any and those early pins will only hurt your first flush (they will take away energy from your first "real" flush). This is hard I know but you will be rewarded trust me. Knowledge is power You shouldn't let your cakes go so long as to have really any invitro pinning, that would mean you've waited to long and/or early light exposure also. GL and don't forget to wash your hands with antibacterial soap FIRST before playing with your cakes!
