Horse/cow poop does not smell offensive at all.
I doubt that's a universally accepted opinion. Take a national poll, and get back to me.
Anyhow, I'm quite certain there are people who would prefer to have their house smell like their house, rather than like a pasture or a nursery.
Also, the very idea of boiling shit, on the stove, in the kitchen, where food is normally prepared, for human consuption can be offensive to some - regardless of what they think of the smell.
For those who have such concerns, or who live with people who have such concerns, the cooler can be very helpfull.
Even if the subjective percepton of aroma or cleanliness issues isn't a factor, using a cooler for pasteurization has the added benefit of increased convenience and less mess.
The cooler could also be kept sealed for longer at slightly lower temps to increase beneficial micro-orgs, and can also be kept sealed and used for a time as storage for currently un-utilized compost.
