I don't know about flushes, however deeper substrate has generally provided my goldfish with larger shrooms.

While it's true that deeper substrates produce better to a point, it is possible to go too deep. Stamets recommends that substrates be no deeper than 6-8 inches. Page 124, TMC.

if i were you i'd take that 10 inch depth per container and spread it out times 2...that is, you use 5 inches depth to twice as many containers. i'm sure your yield will substantially increase.

3-6 inches is far enough depth. I use around 5-6 inches for straw/poo and they spit out some size fruit. Anything over that just gives contams a chance to spark up in the center of your substrate.

You can use 10 inches and thicker. Its just not needed. If youve got the straw and no room to put more containers, why not throw more straw in each container?

You will deff need to add a ph balancer (like crusher oyster shells)so the substrate doesn't get to acidic, with as many flushes that would possible from that (if it doesn't contam first).

It will take anywhere from 1-21 days...usually day 3-5 it shows up..dont worry until its been more then a week or two though.
Your alteration in your setup will definatly help your yeild out...everything they said is true, you want surface area over depth. You only go deeper when you cant add more surface area.
