Ok

I have 2 colonized BRF/Verm cakes.

I have a 10" aluminum baking pan that is 2 1/2" deep.

Can I put a layer of verm (how much) on the bottom, and next layer the crumbled cakes? Is 2 cakes enough?

Can I case the top with sterile Jiffy Mix? How deep based on my mentioned substrate layer?

You should try the 60/40 Verm Coir mix instead of just straight verm it worked much better for me.

Like I said, I plan to use Jiffy Mix as my acual casing layer, and verm only as the bottom layer.

Put a thin layer of moist verm on the bottom (maybe 1/4") then 1.5-2 in substrate (however many cakes that takes) then a .5" or so casing layer. If you are using jiffy mix, add crushed oyster shells/eggshelss.

I was curious of your casing because I'm doing one now too with 50/50 peat and verm and I just patched it after some spots poking through and I'm gonna put it in the fruiting chamber. How much moisture does the casing need during fruiting?

The casing layer should be moist, but not wet (moisture content is the most difficult part of casing). If done properly, RH doesnt need to be terribly high, as the casing provides an ideal microclimate for the growth of the mushies.
