can my jars colonize at 70-75 degrees?
    #3889990 - 03/08/05 10:31 PM (19 years, 24 days ago)

im going to have to keep my rye jars hidden in my basement and wont be able ot heat them. They will be inoculated and kept at 70-75 until i move them outdoors. Is this ok? If it's just going to make them colonize slower i dont really care, i can wait. I just hope they will still fully colonize.

yes that is fine and yes you're correct, it'll make colonization times longer.

And I have heard that slower colonization = higher chance of contam.

do you think it will take over 3 weeks to colonize quart size jars at this temp?

is there really a higher chance of contams? Im ordering my jars from spores 101 so hopefully they are steralized well and i dont need to worry about contams.

I've had mixed results. Although higher temperatures can cause faster colonization, I can also vouch for saying they also cause contams to grow faster as well. You may want to heat jars larger than a pint to have colonization completed in a reasonable time, but for 1/2 pint jars, I usually don't incubate.
