Im a little unsure on this

Alright I have this jar that has been going for a while growing at a good pace. Its been fully colonized now for about a week tops. I wanted to let all of the myc mature and let it pin before i birthed it. But I have hit a point where Im not noticing any growth and ive been putting in indirect sunlight. Im thinking maybe the cake is too dry right now? Im thinking that if i birth it Ill be able to dunk and cold shock it setting it on a good path but im not sure if its too immature to do so yet.

Heres a pic of the bottom side of the jar which is where ive taken note that no growth has a occured in a few days. Any help or criticism would be GREATLY appreciated. Thank you.

That jar is fine. I would birth it if I were you. There isn't a reason to pin invitro.
Once the white on the outside turns a strong white, usually 1-3 days more and the whole cake is mature. You aren't going to see more growth because what else is there to grow?
