Over saturated grain can be a constant headache for any mycologist. Rye can easily be air dried in the sink but popcorn requires a little extra effort. I assume you have saturated your corn for a good 12-24 hours before you do anything, as well as boiled for about 20 minutes. Once the popcorn has dried for about 30 minutes in a strainer in the sink, try laying it all out on a clean, dry hand towel and rolling it around. The towel will pick up a lot of the extra moisture. It's a very easy trick that should help you yield some better results.

a tell tale sign that the moisture content is correct in popcorn is if you can easly crush a kernal in b/w your fingers.

I think you said that you simmered and pressure cooked the popcorn alone..doing both is probably the reason you got too high of a water content..

You can try putting a thin layer of vermiculite on the bottom of each jar next time if you are concerned about the water content.

I'd say as long as there is no "pool" of water in the bottom of the jars, you will be fine... my rye grain often looks as you described, and it turns out fine.... a few times around with the popcorn, and im sure you'll work it out.... dont worry 2 much... you should be ok

You should EASILY be able to find rye grain.... if they dont have it they can order it for you.... thats what they do for me....  Check out your local tack and feed locations, or feed barns..... I PROMISE you that you wont have to look very long to find it.... and its VERY cheep for the amount you get..... and smaller grains, equal more innoc points.... try it out brother

"East of tennesee and south of virginia"

This is out in my area and trust me, the land is rich with farms and other feed and seed stores for you to find some great rye products.
