well before everyone and there mom tells you, read the teks and whatnot.

perlite and maybe a humidifyer combo worked good for me in the past.

All you need to succeed with casings is simply to place them inside a larger rubbermaid container. Fan a couple times a day, and keep the casing layer misted. That's it, very simple. You can drill several holes and stuff with Poly Fill for additional air exchange, but it's not required. Keep it simple. With this setup you don't have to screw with messy perlite or humidifiers.

There is always a chance of contamination, especially with a casing layer. You can minimize the risk by working as sterile as possible.

I forgot to add something, I'm assuming this is your first casing try? Don't let the contam factor deter you, it won't be so much of a problem once you get going, you'll see. Once you have your first successful casing, you won't go back to cakes. Cakes are the suck, but some people have done really well with them. I never have.
