when i cook the cars, i cover the holes with masking tape, then take it off to inoculate the jars and put it back on while they colonize. is this correct or should i take it off?

you should have a layer of dry verm on the top that helps with trapping contaminations, i would leave the tape on the jars until you start seeing signs of colonization so your mycelial can get a foot hold in the jars. then after more colonization i would take the tape off so you can have better air exchange.
shrug.

Micropore surgical tape works GREAT. It very cheap and allows the mycelium to BREATHE and hence speed up colonization.

with my first grow i started about 40 jars with about 50% of them got contaminated, i left the tape off after colonization
this run i did 30 jars and so far none got contaminated, and they're about 90% colonized.
i do see moisture buildup on the side of the jars. is it safe to take the tape off?

I'm using those little circular band-aids. they allow air exchange while there is protection from contamination

In my experience it takes longer to use foil. Saying that I haven't used cakes since my first grow.
Micropore works great with grain jars too!

ive found that what works best is getting some tyvek (can be found at staples... look for envelopes with "tyvek"). you can cut em into circles and then put the tyvek over your jar tops and screw the rings on (i dont use the rubber-seal part of the lids anymore, but i dont think it matters if you use them or not). then you can just stick the syringe right through the tyvek and then put cheap bandaids over the holes. another good alternative to tyvek is coffee filters.... both tyvek and coffee filters are breatheable and allow gas exchage, which speeds up colonization.
you could also use foil, and forget rings and lids alltogether, but as stated its a bit slower because no gas exchange.

oh shit sorry man to answer your question take the tape off at about 55-60% colonization and turn the jars upside down.

I also hate the tape.
It is a pain if your doing a batch of 30 or more jars. I havent used tape in about 8 months and havent looked back.
Just a piece of foil over the top is fine.

Forget the tape, it just slows everything down. Never needed one in all the PF jars I've done, that verm barrier protects you from contams just fine.
Taping your holes is one of the reasons so many people complain about stalled jars.

My thoughts exactly!!! I use foil to keeo water out and the top of the lid semi-clean.
