Rye Sterilization Problem

A friend wen't through the process of sterilizing rye jars in pressure cooker for 1.5 hours at a moderate level.....around medium on his stove...at the end of the sterilization..most if not all the rye was baked..dark brown and it looked cooked....should I pressure cook on low...or boil? these rye grains were well done..

Innoc'em and wait. Your PC'ing time and temp was fine. You may have had a little less water in the substrate than necessary. But innoc them anyway. At least one for a test. My rye always takes, even when they look a little cooked.

Did you put water into the pressure cooker? Was there any water left after the pressure cooking? Did you use a rack so the jars don?t sit directly on the bottom of the pressure cooker?

Yes...there was the little rack that holds the items about a half inch above the bottom, and I put about 3 inches of water in the cooker...I'm going to try it again but at a much lower temperature and with more water in the PC.

You can't really lower the temperature of the cooker without changing the pressure. You want 15PSI. It sounds more like you have not got enought water in the jars themselves. Have you tried pre-boiling to get the water level correct instead of measuring it out?
