About a week and a half ago I had 4 out of 7 compleatly colonized jars. So I cased the 4 and left the other 3 to finish colonizing. now they wern't so I tried punching a hole in the lid to try and speed things up, and when I did a bad smell came out almost like vinniger (sp). now I cased the others and am wonder if this is contamination are my casings still ok, or what should I watch for specifically on the casings.
I wasn't able to smell the ones I cased cause I had my shirt over my mouth and nose. Thanx

If the ones you cased looked healthy and white I'd just wait and see what happens. They should be ok. The vinegar smell is most likely a contam aye. Anything besides a fresh mushroomy smell is bad. Those 3 jars were perhaps not totally colonized because of the contam in them.
Another thing...having your shirt over your mouth is not needed really when working with fully colonized cakes ...and trust me your shirt isn't going to stop any contams your breathing out of your mouth. :)>
