What are you growing them on? What size containers? How far along are the jars?

Did you use a Pressure cooker? peat does in most cases require sterilization
It might come from the peat itself

I also have a jar with white mycelium growth that also has yellowish coloring in places.
Originally, I had 10 jars. I incubated them improperly, allowing the temperature to rise above 106 F. I'm not sure how far above, though. The jars were left un-discarded, yet without expectation of growth in an unheated location. Part of my unwillingness to throw them out before I was sure I'd killed the spores. One jar of the ten began to grow mycelium but with yellow.

hard to tell but it could be myc piss. according to MAIA, a shroomery member, myc piss is:
"Myc piss is simply a bi product of mycelium metabolism, it's an excretion. It happens due to many factors, most known are excessive heat and prolonged incubation time, some strains seem to be more prone to this scenario than others."
