Do pan cyans that are colonising in 1pint jars of finch seed need to be shaken at any point or is the mycelium too delicate?

The mycelium is not too delicate. You should shake them once you see app 10% of the jar surface colonized.
The mycelium will seem disappeared thereafter, but it will regrow unfirormly in the whole jar after that.
