brf substrate goes bad after a few weeks?

DOes anyone else notice that brown rice flour and verm substrate goes bad after a few weeks..
I boil the jars in an ordinary pot for an hour.. and I innoculate them and then they slowly turn darker and start smelling putrid after a few weeks.. even though there is mycellium growth.
its not like a mold or anything, the actual brown rice just turns darker.. the mycelium is fine still though
it just seems to slow down the mycellium growth a lot.

any idea whats causing this?

That's a bacterial contamination. It's a summer thing. A pressure cooker may help.

So once it sets in I cant innoculate and I'd have to redo the jars right?

One of my friend's jars turned out like this. The rice just got blacker every day. At first she didn't think it was a contam (because all the contams she'd heard of then were big green blotches) so she left it. Only a tiny bit of mycelium grew. Once the jar started to smell, she knew it was done. She buried it in her backyard, her dog ate some of it, and that's the end of that.

I should mention that this contam can also sneak in via your inoculate. Honey water in particular can "go south".
Also, I've gotten healthy fruits from excising the rotten substrate and then casing.
