can shrooms be left to dry in open air or next to a warm heater or do they lose potency from being left in air too long?

That would be fine I use a fan laying on it's back and I put the mushrooms on top and then for that extra crisp touch it's to the oven turn oven on to 200 F then let it heat up when the light goes off turn the oven off and then insert the mushies and let the oven cool down while cracker drying them

Mushrooms will not loose potency by being left too long but they will rot. Heat degrades the mushrooms potency so use it as little as possible. The best way to dry a small to medium size of mushrooms is to fan dry for 24hours in front of a fan and then to finish them off in a dessicant chamber. This will produce cracker dry mushrooms with little potency loss for up to a year of storage. Dessicant can be found is hardware stores in the paint sections. Such products like "Damp Rid" and "Damp-Be-Gone" come to mind. Dessicant can be reused by heating up in an oven and then stored in a dry container so it is well worth the purchase. When you fan dry to shrooms enclose them into some sort of screen so they do not blow away after they loose some of their weight. Make the blowing air avaiable to all sides of the mushroom. If you need more information there is a whole section dedicated to the perservation of mushrooms in the Grow/Find section which can be found on the left frame of the shroomery.org
