Coco Coir casing question

OK, here's the deal. I used a 60/40 mix of coco coir and vermiculite to case some compost I have going in a big rubbermaid (compost was completely colonized by the mycelium). 7 days later there still isnt much mycelium growing through, except for around the edges. Now, obviously something is wrong with this situation, probably the pH because there's no funky smell (just a strong smell of wood or sawdust). Everything was going great until I cased, now its stalled up. Should I take the casing mix off and recase, or just leave the casing mix off and see if it fruits?

How thick is the casing and how moist and what is the temperature?

The compost layer = 2-3 inches thick
The casing layer = about 1/2 inch thick
Moisture level in the casing layer is good, I squeezed a handful of it and a drop of water just barely dripped out.
The temperature in the room is 70-80 degrees.

Most of the time I have mycelium breaking through the casing layer within 2-3 days, this time there's not much happening. Is it too late to recase with mix that I know is right? (pH, moisture, sterility, ect.)

I've lost a couple casings to green mold, but I've never had one stall up this way before.

How did you prepare the casing material?

Sterile it?

Microwave it?

etc.

I sterilized it in the microwave. What I didn't do was add any buffering material to the casing layer. I usually throw in some ground limestone or powdered cuttlebone to the mix but I didn't have any at the time and I didn't think it would make much of a difference.
So.... now I'm making up some new casing material with the buffer and I'm going to try to recase this thing. I've never tried recasing so I'll keep updating to document whether it works or not.

Correct me if I'm wrong, but shouldn't you usually put your casing into incubation conditions for a couple days, allow the myc. to colonize the casing layer, and then go to pinning conditions???
