Put an inch or so of water in your pot, along with the jars. Close the lid and apply heat. When you start hearing the valve expel pressure, start your timer. That's it.

if its a pressure cooker that you are trying to use. U should put some water in the bottom just enough so that it covers about an inch of the jars you are using. make sure u have a rag or some spacers at the bottom too so you dont damage your jars. then put the lid on. they usually have some sort of safety lock, make sure that is in place. place on the burner on high until proper pressure is reached (usually 15psi)) then turn down the heat to maintain 15psi for an hr. hope that helps

i have a canning one, with the rack, and it's pretty old school, and has a screw to adjust the steam coming out, along with a pressure gauge. Should i use the low heat with less steam excaping, or shoudl i do a higher ehat with more steam excaping? or would it matter? i've had probblems in the past with jars that become too wet after pressure cooking. ie wet verm layer on pf jars, resulting in contams

use high temp to get to 15psi then use a lower temp with less steam to hold the 15psi

once you reach 15psi you want to turn the heat back and just maintain 15psi with a slow steam coming out of the valve... as far as your contammed jars, make sure you cover them appropiately with alum. foil, or something that will keep water from entering the jars... GL to ya

If it is an ALL AMERICAN PC, with the toggle steam release valve, just add a pint of water below the insert grate, load it, screw the top down evenly, apply heat, wait until it reaches 15/18 psi, reduce heat - so it maintains desired psi. NO STEAM WILL ESCAPE, unless it becomes over pressured, Then, it will release steam pressure through valve. Set timer & enjoy.
EDIT, seems you got 5 answers & made a reply while I typed this. JUST BE SAFE.
