Here's what I want to make for valentine's, it seems pretty easy and impressive:

MUSHROOM AND GOAT CHEESE STRUDEL WITH BALSAMIC SYRUP

2 tablespoons plus 6 teaspoons olive oil
1/2 cup thinly sliced shallots
4 garlic cloves, minced
1 pound mushrooms, chopped
1/4 cup Sherry wine vinegar
1/3 cup dry Sherry
2 tablespoons finely chopped fresh parsley

3 fresh phyllo pastry sheets or frozen, thawed
1/2 cup crumbled soft fresh goat cheese (such as Montrachet)

1/2 cup balsamic vinegar
1 tablespoon mild-flavored (light) molasses
Heat 2 tablespoons oil in heavy large skillet over medium heat. Add shallots and garlic; saut? 4 minutes. Increase heat to high. Add mushrooms; saut? until tender and golden, about 15 minutes. Add Sherry wine vinegar, then Sherry; boil until almost all liquid evaporates, about 6 minutes. Season with salt and pepper. Cool. Mix in 2 tablespoons parsley.

Place 1 phyllo sheet on work surface. Brush with 2 teaspoons oil. Top with second phyllo sheet; brush with 2 teaspoons oil. Top with third phyllo sheet. Sprinkle cheese along 1 long side of phyllo, 1 inch in from edge. Spoon mushroom mixture over cheese. Fold short ends over. Starting at long filled side, roll phyllo up tightly. Place seam side down on baking sheet. Brush with remaining 2 teaspoons oil. Using long sharp knife, score top of strudel through phyllo, making 8 evenly spaced cuts. (Can be prepared 4 hours ahead. Cover; chill.)

Preheat oven to 375?F. Bake strudel until golden brown, about 50 minutes.

Meanwhile, boil balsamic vinegar and molasses in heavy small saucepan over medium heat until reduced to 2 1/2 tablespoons, about 10 minutes. Cool.

Using serrated knife, cut hot strudel at score marks into 8 rounds. Drizzle balsamic syrup onto each of 4 plates. Place 2 slices of strudel over syrup on each plate.

The recipe comes from Epicurious.com

I'd say if you can't find sherry vinegar then just use some other kind of vinegar like balsamic or something. Also-I'd serve it with a pretty mixed green salad and I plan on wrapping some cooked asparagus spears with smoked salmon and then drizzling lemon juice on it with some fresh ground black pepper. For desert just buy some kind of nice looking fruit tart or chocolate mousse thing. Anyway-good luck.

something without onions and garlic is better for the more intimate or romantic occasions. if you do make something with garlic or onions, vanilla ice cream afterwards is good for cleansing the palate...breyers makes good vanilla ice cream.

You should make her some fettuccini alfredo with chicken, and some breadsticks with a pink wine. This was the first fancy meal my man made for me, and MAN is it good! I was so impressed    If you want the recipe, ask Gr8fulj420, and maybe if you're nice he'll help you out  Chicken enchiladas or some stir fry could be options also. Girls just love it when guys cook for them!

if you are still considering another idea....this is what i call pasta supreme
you need 1 lb pasta, anything but spaghetti
8 grams cheddar cheese (the yellow kind)
3/4 lb chopped ham
1 jar of marinara sauce
seasoned breadcrumbs
fresh romano cheese

boil the pasta so its just alittle undercooked, pour the pasta in medium cassarole, oven safe dish, with 4 grams of the cheddar cheese, put the ham and rest of the cheddar ontop of the pasta, then pour the marinara over the dish, then sprinkle a good amount pf breadcrumbs over the top with the fresh romano cheese, dont be shy with the cheese

put it in the over on 400 for about 15-20 minutes

you can serve it with garlic bread

for wine i suggest either riesling or pinot grigio

Hehe, thanks! I owe it all to my Baby, he's the best hippie chef ever! Cooking for your lady is waaaay romantic, we girls just love that kind of stuff  He used such a great basic recipe, which is great by itself or you can add your special spices. A nice sweet pink table wine (I love the summerset brand) will be great, unless you know of a specific kind of wine she enjoys. You should eat it while watching one of your favorite movies, or with some great music on in the background.

Have a great time with that tonight!
