Blotches on caps
    #375349 - 08/20/01 08:20 PM (22 years, 7 months ago)

Ive just noticed that the caps on the fruits from one of my casings have dark blotches on them. I have read that this is because of contams. - but this cake looked fine when it went in... Can i still take prints off these and/or dry them and gobble them down??

Drying them would kill the bacteria. Do what you think is safest though.

Seems like a waste to just throw them out, Hell send um to me. If you dry them i dont think there should be a problem, if you are still weary them then soak them in some strong alochol and gulp um down in a mix drink even, dont toss um!

Bingo, GreatC.

I cultured my blotch awhile back, Pseudomonas fluorescens var. putida, harmless bacterium. It's the same species as the one that covers the entire surface of most chicken you buy in the store. Does not sporulate, is very easy to kill by drying. Toxin production, insignificant. Allergic reactions? Who knows. I've always dried and eaten anything with a small degree of blotch, no problems. If the thing is mushy, it likely stinks, and gets tossed.
But as he said, do what makes you feel most comfy.

Actually ive got a feeling the blotches are actually from water droplets, so ill dry them to be sure and gobble them...Im not too worried as i live two doors down from a huge 24hour medical centre

I've noticed some dark blotches before. Small like a finger print, so I alwasy just thought it was a bruise. Do you guys
think that it is this bacteria or a bruise like I thought? I try
not to touch my stuff when it is growing but sometime I can't help it when I have to move things around.

Thats what i heard originally, but i tested what water droplets will do to a cap as someone told me it might be that, and it was...

spray your fruit bodies with diluted hydrogen peroxide when they're pinning so you don't have that problem...

Doesn't spaying directly during pinning cause abhorts? I sprayed directly on my last casing while it was pinning cuz I thought I was getting cob web and I had about 75% abhorts and the fully grown ones were pretty scrawny.

If you use 1 part 3% H2O2 to 9 parts water, you won't have any problems.

>Does not sporulate, is very easy to kill by drying
So it doesn?t produce endospores?
Can print?s from such fruits be taken without the risk of spreading the contaqmination on the next generation?

Now that's an interesting question.

Personally, I would print a cap with a small superficial blotch infection--the blotches usually are on the top, outermost surface [Pseudomonas is an obligate aerobe; only likes areas with good oxygen exchange]. As the cap is printed, the Pseudo dies off from diminishing humidity.
I would not print a cap that showed a large degree of blotch, or blotch that has infiltrated gill tissue. The reason for this is the phenomenon of 'biofilms', whereby the by-products of a primary infection [in this case Pseudomonas] can form matrices and other goopy metabolites that can support other microbes. . .possibly endospore-forming genera.
But theoretically, if the infection was pure Pseudomonas complete drying/spore printing will kill it off. I'd be wary of assuming any infection is pure, though, usually there's a primary pathogen and a handful of opportunistic secondary ones. The number of secondary ones increases as the infection [degree of blotch] increases. You can get some stinky anaerobic bacteria going in a very blotched-up cap.

Of course, this is all speculation; I've never tried culturing bacteria off 'compromised' prints before.
