over presesure cooked?

i pressure cooked my jars and left my gf incharge of turning off the cooker at the 2 hour mark well i got a call 3 hours later asking if she should turn it off, i freeked. well it cooked for 3 hours maybe a little more. the next day when i went to inoculate there was a rank smell from the bird seed. is this bad? think it got all screwed up? there was some brownish shit mosture on the glass of the jar.
i shot them up anyways hoppeign for the best. think im waisting my time with them?

Man. Why didn't you start over? I think that overcooking can mess up water content. I hope it works out for ya. Good Luck.

but yeah dude, i usually PC for an hour, just to make sure, but 2 hours is beyond generous, and 3 is jus too much

I think youre fine. There is a nasty smell coming from my friends birdseed but after 3 weeks there are no visible contams. As long as the birdseed still appears light, fluffy and moist you should be ok (as long as you waited for them to cool off before injecting.) I believe the smell is from the fermentation of some of the sugars in the birdseed (i assume your jars have air exchange of some sort (polyfill, tyvek, both?) Let them go for a couple weeks and see how well they colonize

finnaly someone on my side, yes they have polyfill in them, i fegured fuck it took me a while to prepare the birdseeds(geting the damn sunflower seeds out and shit) i didnt wana turn back i waited this long. i fegured i can just go get another case of jars and go at it again and maybe have 2 times as much. ps i did 11 jars, thats why i was doing it longe, my old pressure cooker was a small ass from walfart, i just got a 23q and im lovin it. anyone else think im in the clear or out for contams.?
