how long will my jars keep in the cooker?

I know this has been answered before, but I have no idea what to search under for my question, so;

Once jars have been sterilized in a pressure cooker, how long can they stay in there (say I just can't get to them) and still be sterile?

I want to say it's been 4 days.....

I want to say 4 months.

I've never kept them around for more then 4 weeks though so thats all I could say for sure.

Sooner the better but if still in the PC, you'll definatly be fine.

You can go quite a while if PC'd right.  I've kept PC'd grains in cool temps for 2 weeks before using, they worked fine.

By the way, you can take your jars out of the pressure cooker :smile:

I agree, a week or less at cool temps should be fine, (I done that several times with no contam issues).

Recently I've had massive problems with cobweb mold, which I've put down to PC'd grain and casing mix being stored in not so cool conditions (its summer here) for a good couple of weeks. 

Has anyone else had similar problems (cobweb) with casing mix that has been sitting around (sealed but not in the pc) for at least 2-3 weeks?  Yes it was PC'd for a good hour and it looked and smelt fine when it was made into casings, but now a good 70% of my casings are now doing battle with cobweb  :frown:

Nope. If it looked fine when you cased with it then it wasnt in the casing mix. You had the spores around. I have casing mix sit around for 4 weeks often.
