Rye problems

FOAF gets his rye from a health food store, it organic. out of the five quarts he's prepared so far he's had no luck. Using a spore syringe of course there was nothing (expected), but even the grain to grain left the colonized kernals just sitting there-no further colonization. After consulting with some of you preparation of the jars was changed. The last time he soaked for 24 hours strained for 1/2 hour and PC'ed for 90 min. Grain took on a dark grey appearance. Same results after G2G. He's wondering if maybe he's using rye with a antifungal additive or something?
Any Ideas he sure would appreciate some enlightenment.

If its organic, it has no additive. Hence the term organic.

Whats your method for bringing the moisture content of the grain to optimum levels?

I think it may be soem of the minerals in your water.

I dont have a dish washer. I was my dishes by hand. It slipped my mind one day that there might of been some dish soap residue on my faucet. *shrugs* I use the water from my bathtub now.

there are a lot of different trace elements, chemicals and other things in most
tap water, soap excluded. My water, although provided by the city has nothing
additional added like chlorine and fluoride, before I moved here, I had the same
thing happening with my rye

Same thing happened with the water at my new apartment...tastes like crap to me and mycelia hates it too. Gallons of spring water are damn cheap and you can be sure it's clean.

P.S. Thanks for the link Prisoner. I have a friend who worked at Ritz until recently and has a bunch of those cameras :smile:

i use city water with no problems... although my city has ridiculously clean water so maybe I can't compare. I think maybe you're PCing it too long. I only go 45 minutes on my rye. Any longer and you start to run into problems with caramelization.

NOS4A2 are you simmering your rye at all? If not, you aren't getting the moisture content you need. Soak for 24hrs, simmer for 30, rinse and strain for 30 and then pc.

What? Please explain to me how rye carmalizes? You should PC rye for at least 60 minutes, you can PC it for hours though without problems, so long as the PC doesnt run dry. Pressure cooking doesnt alter the rye.

If you just soak the rye, try simmering it too until the kernals START to pop. Then strain. I mix a bit of verm in too. Then load into jars and PC for 1- 1.5 hours.
