PC Popcorn Prep

I've experimented with popcorn a couple times before. I've always used the method of soaking and simmering to get the water content correct and I've had variable results with that. I've heard talk about using the PC to do this and I just brushed it off but this time around I decided to give it a shot and I can say that I will NEVER go back to the old method. PC'ing your popcorn to get the water content right does a perfect job. PC'd at 15 psi for an hour and the kernals are great. Loading em up into jars tomorrow to sterilize and I'll let you know how everything goes from there. This is also going to be my first attempt with bulk. So far so good!

Take PC, add popcorn, add water, and PC for an hour at 15 psi. That gets your water content perfect. That doesn't cover sterilization, you have to put it in jars from that point and PC again. But I find that PC'ing the popcorn to saturate it is far more efficient than simmering it.

The smart thing also is by waiting 24 hours after first PC. Now if some nasties survived the first PC they have time to germinate, and you will kill them with the second PC! :laugh:

It doesn't matter. Just make sure there's enough water in there so the PC doesn't dry up (a couple inches over the popcorn). You'll have to drain the popcorn as usual.

Could you elaborate further as to why it is superior?
You are still cooking it twice, and you have the warmup and cool down cycle of the PC added to the mix. Further, there is no way to actually check the water content while it is cooking so how do you know it is perfect?

Well, by perfect I mean as perfect as I'm going to get it. As I've said, I have tried simmering it and I've had mixed results. Sometimes it was way off, sometimes it was close, but it was rarely very very good. I PC'd and all the kernals are soft and easily crushable, a tell-tale sign that they are at an appropriate water content. It's just a more idiot-proof way of doing things I guess. You don't have to keep checking on your kernals to see if they're saturated enough or not, just wait an hour and let the PC cool down, check, and you'll most likely be pleased.

Just try it, a 1$ bag of popcorn, PC it twice. After first time let it drain, you can check the corn on watercontent.

First time PC it free in the water, not in jars. Then load in jars and PC again. I think its smart to wait at least 12H to give surviving nasties a chance to get in the vulnerable state.

Definately man. I'm letting it sit for actually 24-36 just because I got stuff to do today and don't have a chance to PC it again, but I could've done it yesterday but I want to give the spores a chance to germinate.

Since the corn is PC-ed loose in the water all corn gets a good heat penetration. I dont think many spores will survive but better be safe then sorry!
Whats 24 hours waiting compared to a contam and to start all over! :laugh:
