So i work at a food place and was doing prep...
I get roast beef sealed in plastic which we slice on a meat slicer... When i cut it... at the end there was a green to organge *tinge* that changed with light. It was just like a hologram... and it went all the way through the hunk of meat... By the end i had a bin of holographic beef staring up at me..
And it really creeped me out. WHATS UP!

I wouldn't eat it for years for that same reason. I used to think it was some chemical additive. I have no idea why it looks like that though.

Rainbow transmission holograms allow viewing by white light and is commonly seen today on credit cards as a security feature and on product packaging. These versions of the rainbow transmission holograms incorporate a reflective foil backing which provides the light from "behind" to reconstruct their imagery. The reflective foil in this situation could of simply been the plastic. If lighting was right, it is possible.

i've noticed this too. and i'm shocked no one has delved into this mystery. the holograph is part of the beef itself. its organic in nature and non-hostile. it comes from within the beef. therefore it cannot be plastic. i dont know if anyone will ever discover what it is, but remember...within every cow, resides a hologram.

Do you mean the same effect you sometimes see on fresh ham?
"When selecting a ham half, portion, or slice, the surface of the cut may have an iridescent color. The iridescent color is a result of light hitting various exposed compounds of the meat after it is cut. The light causes a prismatic affect when it hits the exposed surface of the meat and gives it an iridescent appearance. The iridescent color is not a sign of deteriorating quality or any indication of a safety problem with the meat."

He is absolutely right, it's just the natural chemical and facets in the muscle fiber. You can see it on ham and other cuts of deli meat as well.
"Is it safe to eat meat that has an iridescent sheen? Absolutely. The appearance of an iridescent sheen on sliced cured meats such as ham, dried beef and corned beef, as well as sliced cold roast beef or lamb, is simply the effect of illumination (daylight or artificial light) on the fibrous cut surface of muscle.
This iridescent sheen has no sanitary significance."
http://www.beefitswhatsfordinner.com/askexpert/default.asp
Iridescent Beef, why does sliced cooked beef or lunch meat sometimes have an iridescent color?
"Meat contains iron, fat, and many other compounds. When light hits a slice of meat, it splits into colors like a rainbow. There are also various pigments in meat compounds which can give it an iridescent or greenish cast when exposed to heat and processing. Iridescent beef isn't spoiled necessarily, but if it is slimy or sticky and have an off-odor it's definitely not edible."
http://missvickie.com/howto/meat/meatbeef.html
"The iridescence on the surface of cut meats (usually those which are processed with the addition of water and phosphates) is due to the surface moisture content and index of refraction increase from dissolved solids. Phosphates in particular greatly increase the effect.
"Dry surfaces scatter and absorb rather than reflecting and refracting light. So the effect is normally only seen in meat which has been processed to increase moisture content or which is exudative.
"The iridenscent sheen is seen typically in ham, corned beef and smoked turkey. Since fat is translucent, it tends to nullify the effect by scattering and absorption. Consequently the effect is not noticeable in such products as bologna, etc.
"The effect is purely optical and is harmless. You may take it as an indicator of high leanness (low fat content) of the meat involved."
