Interesting question, but unfortunately I doubt it would work. The strains used for active dry yeast are probably selected for the reason that they can be dehydrated like that. There are other yeasts, like sourdough strains, that don't take well to low moisture levels. Aren't there mushroom varieties that can go dormant when they dry out?
