I have a major infestation in a vegetable garden I am planning to work with. I don't want to use nasty chemicals, so any organic approaches you have for fighting these little bastards would be absolutely fantastic.

Just order a bunch of praying mantis's (spel?) and let them go. It would be a nice thing to watch.

I used to "farm" in Kansas, and grasshoppers are probably the worst pest. Sometimes there were so many hoppers in the field that they looked like popcorn popping. My strategy was to plant in cooler areas closely surrounded by forests. Hoppers like very warm and sunny places. They get a fungal infection when it's too wet and cool, so the woods are not their favorite place. Think about it--do you see the hoppers in sunny, open fields or do you find them in the deep woods? Look for small, sunny spots surrounded by shade and far from open fields. Otherwise, the only option is heavy insecticide, applied frequently. I have heard of a product like bacillus thurigensis (BT) that kills hoppers, but I've never seen the product.

besides what they said you might get some ciggerate butts and soak them in water. Nicotine is a powerfull insectocide, i dont know how often you would have to spray the plants to keep the bugs off tho. You could google it.
