Darkened grain and jars not colonizing :( (pics)

Several of my grain jars(like 14 out of 20) are just not colonizing. These were all inoc'ed 12/19. I was told before that it was most likely because the water content was too high.
How can I prevent this in the future?
Here are a couple of pics of what several of my jars are looking like, its like the grain is creamed or something. Are these jars pretty much screwed?


I also have a few jars that started to colonize, but has halted and the grain has become a noticeably darker brown. Any ideas as to what caused this and is it possible to still get them to colonize?

those cream jars are fucking bacteria central. is there a way you can smell them through the filter?

looks like a bacteria contamn to me. you may of had too high of a water content.

Im using tyvek.
I can smell an odor when I open the incubator, kinda sour. I have been advised prior that the odor I smell is normal for grain.

nope that sour smell and that slimy creamy stuff in the jars is bacteria contam.. usually due to too much water like someone said.. chuck em

So how did the bacteria get into that many jars? I PC'ed em for about 70 minutes at 15 PSI....

a sour smell is not normal. A pleasant mycelia smell is normal. That sour smell is bacteria infestation. That looks and smells exactly like bacteria. I have no clue to your dark jars.

grain should be cooked for at least 90 min. afoaf uses 120 min.

70 minutes can do it. I use 90 usually. It's hard to say if the water content was actually off. I'd have to see pics of jars after sterilization. Try PCing longer next time. You are counting the 70 minutes after the weight starts jiggling right?

ya, if you're having that many jars, follow what I and shroomism do.
soak rye for 12 hours, simmer for appropriate time (45-65 minutes) strain and rinse with a shitload of water. PC jars for 90 minutes. Dont open PC until pressure is at 0psi, it'll mess up water content.

Oh damn, didnt know that derx. That might be what the problem is then....I auto released the steam, rather than just letting the PC cool down. That might be what screwed me.

It could also have something to with your inoculation techniques. Did you sterilize the bejesus out of the room before you shot them up? Make sure you do that. Perhaps run a hepa for an hour, then shoot them up in the up flow of the hepa. Flame sterilize the needles, did in alcohol. Did you make the spore syringes yourself? Is your tyvek seal fucked up?

did you soak the grain over night before you simmered & PC'ed it? That's usually important.
