ok...if one were to dunk/cold shock their cakes and then planned on casing them, what temperature should they be at after applying the casing layer and while waiting for it to colonize, while its still being kept dark? should it be kept up at colonizing temp 86 or fruiting temp of 76?

after u crumbled and cased, incubate them till you see breakthrough of the casing surface.
then, after you can see it break through in about 20% you put it to fruiting conditions. peace ohm

The cold shock isn't necessary when crumbling cakes for casings period. All your doing is slowing/stalling myc growth when you do not want it!. Ok? You will want all your pinning triggers initiated at the EXACT same time, ie; temp drop of 8-10F. optimum (cold shock), light (12-16hrs. optimum), and plenty of fresh air exchanges with light mistings after each exchange to replenish humidity. I recommend dunking in the fridge no problem then as ohm said incubate at 82-84F. until myc pokes thru, if it's not evenly breaking the surface lightly patch those areas and incubate another day of two then thats when I would birth. Mixed message I know GL
