questoin about mycelium and colonization

i know the cake should be fully colonized before it is removed from the jar to prevent contamination. my questions is in the instance where the cake breaks apart ,(not sure yet how firm a cake is when it is removed) as your removing it from the jar or say if ur gonna case and you break up the cake anyway if its showing mycelium on the outside that doesnt mean it is colonized on the inside right? wouldnt this mean breaking the cake up for casing would just set up you up for disaster? im confused

after the jars look 100% colonized wait an extra week for the midde to get done. and yes throwing uncolonized brf into a casing is setting yourself for a contam.
