Good cobweb cure

I just had my first bout with cobweb mold - its been thankfully basent in previous casings. However, after reading TMC, something occurred to me. Cobweb mold doesn't like high pH. One of the ingredients in casing in hydrated lime. I acytually use pickling lime as its a little purer product being food grade. However, lime is CaOH2 and has a really caustic nature. A light dusting of lime on the casing surface and misting using a sturated solution of limewater seems to have wiped it right out, and pinning and fruiting continues unhampered.

what ratio lime to water and where do you get that food grade lime?

Pickling lime is available at grocery stores in the canning section - not all stores have it, but most do. Mrs. Wage's and Ball brands are the most common. Calcium hydroxide dissolves in water and will form a precipitate when saturated. The resultant supernatant is high pH limewater. If exposed to air, the pH will drop over time, but in a sealed sprayer, it should keep quite well for long enough to kill the cobweb mold. Its so cheap you could just make it up fresh daily. A teaspoon per 16Oz sprayer will more than saturate the water.

I guess I should have posted this in the contamination forum, but I'm sure its useful here or can me moved by a moderator if needed ;-)
