Mushroom jerky
    #3615851 - 01/12/05 12:11 AM (19 years, 2 months ago)

My mom bought me the poster by David Aurora, titled Edible Mushrooms of Gardens and Stumps. On it, it says that Fistulina hepatica can be dried and made into mushroom jerky. Has anyone tried this? I do not think this species grows in my area, but I thought that sulpher shelfs would also jerk well. The chicken-like grain would make good jerkey. Anyone?

Antonio Carluccio (Complete mushroom book) considers
Fistulina hepatica as the best tasting of all polypores....

edit:
besides Laetiporus sulphureus, that is..

I guess it depends on A) how you make the jerky and B) how much you like vomiting.....lol

I had heard before that chickens don't dry well (comes back as wet sawdust instead of rehydrating well), and also that raw chickens can make you pretty sick. Cooked and dried may be another thing I suppose....the thing w/ beefsteak is it was also supposed to be one of the few that are fine uncooked, so it may have been "jerked" raw. Still, if you have a dehydrator and some cooked chickens, its worth a shot....

I don't have this one. I dont think it grows in my area.

Would any one want to go in on a culture co-op for this one or any other fungus that is not widely available on the boards?

Wanna start a thread to vote? Off the top of my head, one species that is relatively common is the Paddy Straw, but I've never seen any mention of cultivation here. A. blazei is fairly rare in here, but I recently tracked it down. V. volvacea, F. hepatica, or the Buna-Smiji complex.

I would bet alot of people here would also enjoy playing with these cultures: http://users.chariot.net.au/~dna/koji.html

None of my cultures are really anything special to me, they were either wild or traded, and in most cases I'd assume that it was wild. I don't own these cultures anymore than I own the deer in the woods. None, I presume, were specially bred commercial cultures, so I have no problem sharing with others. If postage were free I'd send my whole collection to anyone wanting, but postage isn't free and neither is plasticware, but thats not the biggest deal here.

Hell, if anyone wants anything from my list in the marketplace, just send me a self addressed stamped envelope.

I tried getting a culture of Vv from a dried mushroom. The isolation that was made. Grew out on a plate in 4 days and threw out houndreds of what I thought to be many ball like pins. But when trying to get it to take to straw I failed. Maybe it wasnt what I wanted maybe was and I dodnt have the substrate right. I dont know.

That top image doesn't look like Fistulina to me. I have a culture I collected a year ago and it seems to be forming tissuelike growths on 2% malt agar under refrigeration. The plates have a lot of condensation but you can see the tissue. It is reddish and has the texture of Fistulina fruit body. I just tried to reisolate the old culture and will attempt some fruiting on sawdust substrate now that I see it can be done.
