Yes, I am in the right forum. I am making wine as well. Can I use spent wine yeast instead of brewers yeast for MYA? Can I use grape seeds/pomace as substrate for edibles? Can I use wine yeast nitrogen source such as DAP or Supervit to substrate?
I have no experience with wine yeast/wine making but here are my two cents:

Probably it will work - try it out !

Would not use it as a substrate but rather as a supplement.
Test out adding different amounts ( 5% / 10% / 15% / 20% / 25% ) of pomace to a regular sawdust/straw substrate ...

Is it only a nitrogen source or does it contain something else ?
If it is only a nitrogen source it might serve as a supplement to increase yields ...
