Best to leave them alone untill finished then dunk and roll. As to the consistency, I'm not sure.

they don't sound too dry yet. It is possible to rehydrate without contams but it is hard. I don't think you will need to try it.

IF...IF you KNOW they are a tad dry you could inject "sterile" water into them , in very small amounts .
Is best to make sure you get moisture content right the first time , adding water adds to the risk factor of getting contams .
