Pressure Cooking

AFOAF read that it's better to let the jars cool in the PC due to moisture loss if you release pressure too soon.

Question: If the PC is back to normal pressure (psi guage doesn't release steam when you mess with it) would it be o.k. to pull the jars out even if they are still warm?

Asking this because lots of substrate needs to be made. Thanks.

If a jar vents steam... when you pull it out... it will lose a little moisture. But, there is a trade off, for speed. My foaf waits about 15 minutes after PC is at zero pressure & removed from the burner. He does well.

If you can touch them with your bare hands without them burning you, they probably wont steam/lose much moisture. "warm" rather than "hot/misting/steaming/scolding"
