Root-like. An adjective used to describe the appearance of the Mycelium of some mushroom strains. Rhyzomorphic growing Mycelium is usually a sign of a well Fruiting Strain.

I beleive that what you are seeing maybe primordia. Depending on how far advanced they are. If your jars have been 100% colonised for a period then they probably are.

Let me guess, maybe a little less than an inch long and about 1/16 of an inch thick. Solid looking like an albino weiner? If so,you have primordia.

If your jars are not as advanced then it's rhizo growth as the others said.

if you are using WBS or some substrate that can sprout it could actually be a root. maybe you didn't cook your jars at a high enough temp so the seeds didn't die and are germinating.

your question has been answered - these are normal (in fact beneficial) rhizomorphic growth of mycelium. here are some early ones (imagine these grown long)-

so long as they stay white, it's all good.

NB/ if you get these with grain jars, you may have germinated your grain
