Hello  :eyemouth:
it is in a bomb shelter in my home.
for air exchange I open the window and for humidity I spray the wall and the ceiling.
I did not strip away the plastic.
it is good to have a bomb shelter  :headbang:

They are better when young...more tender.
And you can cook them whole instead of cooking chunks.
The stalks get fibrous as they get older and the caps get almost rubbery.

Don't you have problems with flies in the outdoors?

Have you seen the Handbook from over at Mushworld?
http://www.mushworld.com:1508/sub_en.html

In this chapter: http://www.mushworld.com:1508/service/handbook/2004/chapter-5.pdf

They claim that we could easily grow 360 billion kilograms of mushrooms a year. This would be roughly 60 kg per head per year.
