Has anyone done this?

How do you get the sugar to melt evenly and not burn? I have a gas torch.

When it turns brown the sugar under it hasn't yet melted.
I never get the sugar in the bottom to melt without burning the top. The top sugar will burn before the bottom melts.

Should I torch fast with a hot flame or slowly with a small flame?

I'm trying to make creme brulee for new year's day.

you really don't have to use a torch. if your oven has a broiler, heat the broiler for 15 min., make sure the creme is very cold (you don't want it to get warm in the oven. Add your sugar layer (spread evenly) and place as near to broiler as possible. Wait 10 min, then rotate and check every few minutes. The sugar won't burn (right away), and usually melts evenly.

mmm creme brulee! what a nice uutta vuotta treat :grin:

in regards to getting the sugar caramalized, i have a hand torch that i use on full blast and i slowly hover the flame over the sugar till it's the right colour...each small container/pot of creme brulee takes approximately 30 seconds each to caramalize.

:thumbup:thanks for the tips, I'll have to try the broiler thing. Seems I?m no good with the torch...

BoO, do you point the flame directly ar the sugar, or just keep it above the sugar without letting the flame touch it?
(Also, I must ask: why do you have Manila, Philippines as your location?)  :confused:

DEfnitely don't let the flames touch it.The heat is supposed to cook the sugar, not the direct flame.

with my torch i just sprinkle the sugar extremely thin, almost see through on top of the custard then with the heat set at about the middle make very small circles until the spot starts to brown then move to next spot. i love my torch. every made caramelized nuts with yours? drop the nuts into rum or Kahlua then drop them in some sugar and torch. mmmmmmm. my mouth is watering.
