If air exchange, temp, light, and humidity are all the same and you havnt changed strains then I would just say its the mycelium type. Ropey mycelium will be quicker then cottony mycelium in all stages. Either using a different isolate or liquid culture or using multispore can get you different mushrooms. Case to case and cake to cake will vary..
Good news is, IME, the slower they grow the bigger/thicker they get.

Ropey strands= Rhizphomorphs= My Wbs has nothing but, only too it about 13 days to almost fully colonize...it's bigger than a pint...gl

Strains will definatly have very very differnt grow charecteristics...all cubies are similar, but not the same..top soil type could be hindering growth to if you changed it to one that promotes slower growth (less coir or peat..like straight verm), one that holds less water (less verm or straight coir ect), or one with a poor pH (if you switched to using peat and didnt adjust the pH at all or correctly). None of these three things will be good for your yeild. However, casing soil being good, it should be just a strain difference and you could get shrooms that look different and dont yeild as much just because thats what the strain does..a good amount of the time though I've found slow growth just from the strain produces 'nicer' shroomies.

i thought maybe humidity, quate from faq ''Why are there mushrooms only growing from the side of the casing? '' i have bigger shrooms from the sides so... and made a new post. how can i rise the humidity?

Well it isnt for sure humidity...pH can do that too....what casing mix are you use and what were you using.
By to high humidity, its usually not the air in the chamber but the humidity of the casing..what are you using for humidity? Perilite or a PMP will generally be giving the air plenty of humidity and misting should handle the rest (thats how you increase humidity, mist..if you are already using perilite or a pmp) If you dont mist enough or properly then the casing mix can dry out easily, especially if using one that doesnt hold moisture well...with a dry casing mushrooms will only pin from the sides where the moist substrate is...water often condenses on the sides of the casing container making the sides wetter. To properly mist you need a mister like this green one for plants or fat people on hot days..
It puts out ultrafine mist and very controlled so you can get within about 2-3 inches of the casing surface an not end up with overly wet sides and dry middles.
Poor iniation timing can cause that too if the myc did fully come to the surface in the middle like this:
Before it started pinning:
Then you should have waited longer and patched/cased more evenly.
Light hitting the sides will cause lots of side pinning but if the top is properly colonized you should get lots from the top too. See how it pins all in the sides but covers the whole casing:

i use popcorn, golden teacher is the strain. top soil as layer. shame on me , but i don't use anything for humidity. i know thats wrong, but as i said i grew lotsa without anything special except air exchange. so...

Yeah man, theres your problems..you may have had a more forgiving strain and it may have been a more humid time of the year. Regular soil is poor..you need to put some perilite or geolite+airpump in there to get nice flushes. A coir/verm mix would work much better then soil as well.
I have found that GT's do grow slower, but they are one of the most solid shrooms and get quite big...flushes (weight wise) were ok, but nothing incredible..though I've seen some incredible GT flushes..I just couldnt get them to flush like my other casings (like those Amazons above).
Well, anyway good luck in whatever you decide to do and remember you get out what you put in!
