Smoked oyster stuffed mushrooms

I found this recipe on the back of a 'Chicken of the Sea' pouch of smoked oysters. I'm going to make them over the holidays. Luckily they'll be all mine, my gf will under no circumstance eat an oyster or any seafood for that matter.

Oyster Stuffed Mushrooms

Ingredients
1 teaspoon Olive oil
2 Tablespoons Finely chopped onion
1/2 teaspoon Minced garlic
1 (3 oz.) Chicken of the Sea? Smoked Oysters Pouch
1/4 cup Italian seasoned bread crumbs
2 Tablespoons Fresh, grated parmesan cheese
2 Tablespoons White wine
1 lb. Large mushrooms, washed and stems removed (chop stems)
Diced pimento or diced red bell peppers (garnish)

Directions
Preheat oven to 350? F. In medium skillet heat oil until hot then saute onion and garlic until tender. Stir in Chicken of the Sea? Oysters, bread crumbs, cheese, wine and chopped stems; blend well. Fill each mushroom cap with oyster mixture. Place in 13x9x2-inch baking dish. Bake, 20 to 25 minutes or until mushrooms are tender. Garnish with chopped pimento. Makes 8 to 12 servings.
