Picking & Drying

Ok .. I have heard the perfect time to pich shrooms are just before the veil breaks.. my shrooms are about 3 inches big now and I still see no veil anywhere.. does it develop afterwards? And secondly.. after picked.. what is the most efficient way to dry them? is an oven ok? like after it has cooled and is just somwhat warm inside?

The veil isn't visible until the cap begins to open. Its a thing lightly colored peice of mushroom flesh that connects the edges of the cap to the stem. As the cap grows larger and opens the veil tears away from the cap. Its a little hard to explain fully, but when you see it you should know it. I wouldn't reccomend oven drying, I doubt they would dry before the oven completely cooled off. Just stick them in the path of a fan, so that the fan blows over the mushrooms. They should be placed far enough away so that they don't get blown away when they dry, or put a mesh window screen or something like that over them to keep them from flight. If you can get a hold of some dessicant, damp rid will work, you can stick the shrooms in there after they are half dried by the fan. This will get them crisp like crackers.

Just because they're 3 inches tall doesn't mean they're ready yet. You may get shrooms that are twice that height. You'll see the veil when the cap begins to spread out. Look underneath the cap and you'll see it...usually a lighter color than the stem. It will begin to stretch and within a few hours to a day or so it will rip open very gradually. That's when you can pick them. Otherwise, just dry them under a fan for a day or longer and then finish them with dessicant.
